Meal planning for your camping trip may seem a little tricky at first. After all, you want to find something delicious to snack on that’s accessible outdoors! 

While some campfire staples include hotdogs, there are a variety of easy RV meals to try out as well.

Easy Huevos Rancheros

Impress your family and friends, and give your breakfast life with easy huevos rancheros!  Heat up the stove and get cooking with Cruise America’s huevos rancheros recipe.

Pack the following ingredients, to make this delicious breakfast meal:

  • 4 eggs

  • 4 corn tortillas

  • 1 avocado, sliced

  • 1 lime, cut into wedges

  • 1 lime, juiced

  • fresh cilantro, chopped

  • 1 handful of cherry tomatoes

  • white onion, minced

  • salsa verde

  • Cooking oil

  • Salt and pepper

To prep the meal, make the zesty pico de gallo. Chop the cherry tomatoes, white onion, and cilantro, and mix the ingredients in a small bowl. Squeeze the juice of one lime over the mixture and salt and pepper to taste. Set the pico de gallo aside and move onto the next step.

Heat some cooking oil in a pan, preferably cast iron, on your RV stovetop, over a grill, or over your campfire. Once the oil is hot, cook the tortillas one at a time, cooking each side for a minute or to your liking.

Next, coat your pan with oil if needed and crack your eggs into the pan and cook the eggs sunny side up. Once the edges of the egg are nicely browned, the eggs are ready.

To assemble the huevos rancheros, place an egg on a tortilla and spread the salsa verde and pico de gallo on top. Add your favorite toppings like avocado and cheese to complete this delicious and easy RV cooking meal.

Simple Breakfast Omelette

There’s a reason that breakfast is the most important meal of the day. Starting the day off right with an amazing breakfast can make an awesome day even better! 

With Jamie Oliver’s quick omelet recipe, you get to enjoy a delicious meal without any hassle.

To make the basic omelet, you’ll need these ingredients:

  • 2 large eggs

  • salt and pepper

  • unsalted butter

The rest of the ingredients, like grated cheddar or cherry tomatoes, are optional but can spice up your breakfast!

To get started, crack your eggs into a bowl and whisk them with a pinch of salt and pepper. At the same time, heat a frying pan on the stove with a pat of butter. 

Once the pan is hot, pour your egg mixture into the pan. After, all that’s left is to move the eggs around until they firm up to your liking. 

If you’re adding extra ingredients, make sure to add them after you’ve poured the mixture into your pan.

When the eggs are ready, fold the omelet over and serve it! 

Meat and Potatoes

The next item on our list of easy RV meals is a great way to enjoy time around the campfire while also making a scrumptious meal! 

Using tin foil to create parcels of yummy food is an easy and no-hassle technique for cooking food in the great outdoors, and KOA recipe for meat and potatoes is no different!

The ingredients to make this dinner meal are:

  • Potatoes, peeled and sliced

  • Chicken, pork chops, fresh sausage, or your choice of meat, cut up

  • Bacon, cooked

  • Salt and pepper

  • Garlic powder

For cookware, you’ll need fire-safe bakeware and non-stick foil. 

To prepare your ingredients, peel, and slice your potatoes. Cut your meat of choice in bite-size pieces, and pre-cook your bacon on your RV’s stovetop. 

Quick Tip: Save the potato skins to make crispy potato skins for a late-night snack under the stars. 

Next, line your bakeware with foil, layer your potatoes at the bottom of the dish, and season with salt and pepper. 

On top of the potatoes, add your meat, which you’ll also season to taste with salt, pepper, and garlic powder.

Finally, top with bacon, cover the dish with foil and poke holes in the top. 

Let the dish cook over the campfire for about 45 minutes to an hour, depending on your preference.

Once the meat is thoroughly cooked, serve up this delicious meal with confidence.

Campfire Pie

What better way to end the day than with a traditional dessert like pie? If you’ve ever craved a slice of home on your RV trip, then this campfire pie recipe is perfect for you!

You can easily make this treat with the following ingredients and tools:

  • 1 can of your choice of flavored pie filling

  • Cooking oil spray

  • 1 can of crescent rolls

  • 1 set of camp pie irons

Once you’re ready to make your dessert, grab your ingredients and camp irons to get started!

First, make sure your camp irons are sprayed with cooking oil, so your pie doesn’t stick to them. 

Then, roll out some crescent roll dough to make two squares that are roughly the size of your camp iron’s clamps. 

Put one of the two dough squares on your open camp iron clamps. Then, add about 2 tablespoons of your pie filling. Next, cover your filling with the other dough square. 

Now, close the camp irons and cook your pie over your campfire for about 15 minutes! You’ll be having an amazing baked treat in no time.
